The Christmas cookies with rice flour are delicate and crumbly cookies that melt in your mouth, they are great to enjoy with hot chocolate or why not even dipped in milk.
Every year as Christmas approaches, I like to prepare besides the typical Christmas sweets like Panettone, Pandoro, the famous butter cookies that everyone loves, also sweets with slightly different flours and this year, I tried rice flour. The result surprised me! They turned out to be fantastic cookies, crumbly, light, and also a bit rustic looking due to the cracks that form. Since Christmas is near, I dipped half of them in dark chocolate and then decorated them.
Preparing cookies with rice flour is really simple, you just need to mix the ingredients, a bit of rest, and then bake them in the air fryer!! I baked them in the air fryer, below I leave the link to my fryer as you already know I have two, one with the drawer and one with the door and for sweets, I use the one with the door, I find it fantastic.

- 1 1/4 cups all-purpose flour
- 1 1/4 cups rice flour
- 5 1/2 tbsp butter (soft)
- 1/2 cup sugar
- 1 egg
- 3 tbsp milk
- 1 tsp baking powder
- flavoring (to taste)
- dark chocolate
- sugar decorations

Steps
LET’S PREPARE THESE DELICIOUS CHRISTMAS COOKIES
In a bowl, whip the soft butter with the sugar until it becomes creamy, then add the egg, the flavoring of your choice, and the two sifted flours with the baking powder. Mix everything well and transfer the dough onto a sheet of parchment paper and roll it into a cylinder and with the help of a spatula, try to give it a square shape. Let it rest for about 1 hour in the refrigerator and after resting, open the parchment paper and with a sharp knife, cut the cookies at least half a cm thick and you will see beautiful cracks form. Arrange the cookies on a baking tray lined with parchment paper and bake them at 180 degrees Celsius (356 Fahrenheit) for about 20 minutes or, as I did, cook them in the air fryer at 200 degrees Celsius (392 Fahrenheit) for 15 minutes. Meanwhile, melt the chocolate in a bain-marie and when the cookies are cooked, dip half of them in the chocolate and decorate them with sugar decorations. I assure you they are a real treat.
