Cloud Egg White Buns: The Super Soft Recipe with Bimby and by Hand

If you have leftover egg whites, don’t throw them away, try the cloud buns recipe. They are super soft, light, and perfect for any occasion. You can prepare them both with the Bimby and by hand.

A brilliant idea to recycle egg whites. We often prepare recipes where egg whites are left over, like creams or at Christmas time with panettones and we always need to find new ideas to use them like egg white fettuccine but this time, I made cloud buns with egg whites a real revelation! They are very light and have a melt-in-your-mouth texture.

Once tried, they will become your favorites and here’s why: They are so soft that even after being squished, they return to their original shape. The Cloud Buns, have a very thin crust and a white, stringy, fragrant interior. You can fill them with jam or cold cuts, but with a hazelnut spread, you’ll win over everyone, both big and small.

Ingredients

To make super soft cloud buns, the egg white ingredients should be at room temperature

  • 3 1/2 cups all-purpose flour
  • 3 1/2 oz egg whites
  • 1 1/2 tbsp extra virgin olive oil
  • 2 tsp sugar
  • 7 oz milk
  • 1 tsp salt
  • butter (as needed for each bun)
  • milk and butter (for brushing)
  • 2 tsp fresh yeast

Steps

Soft and light cloud buns with egg whites melt in your mouth with every bite, here’s how to make them

  • Procedure with the Bimby: Pour the milk, yeast, and sugar into the bowl, 2 minutes 99°F speed 2, add the rest of the ingredients, 5 minutes dough setting. Pour the dough into a bowl, cover it, and let it rise until it doubles in size.

    Now shape the buns: Divide the dough into equal pieces and form balls, let them rest for 30 minutes. Roll each ball with a rolling pin to form strips. Put a small piece of butter on top of the strip and then roll it like a croissant and let them rise until they double in size.

    Baking: Melt a piece of butter in some milk and brush the buns before baking them, then bake at 356°F for about 15/20 minutes, but adjust according to your oven. Once baked, let them cool and then enjoy. You will find them very soft.

    Procedure without Bimby: Pour the milk into a bowl and dissolve the yeast, then add all the other ingredients, knead and form a nice dough ball, then continue with the recipe as above.
