Ingredients
HERE’S WHAT WE NEED TO MAKE CHOCOLATE COOKIES
- 2 egg yolks
- 2 cups all-purpose flour
- 1 cup unsweetened cocoa powder
- 1 cup butter (soft)
- 3/4 cup sugar
- 2 tablespoons fresh liquid cream
- brown sugar (to roll the cookies)
- 9 oz dark chocolate
- 1/4 cup heavy cream
Steps
LET’S MAKE THE COOKIES
Beat the soft butter with sugar, then add the egg yolks and cream, continue to beat with the electric mixer. Now add the flour and cocoa that you have sifted previously, mix well with your hands and form a nice dough. Take a bit of dough, form a ball and roll it in brown sugar. Place all the balls on a baking tray lined with parchment paper. Make a hole in the center of each ball, I used the handle of a wooden spoon, bake at 355 degrees Fahrenheit for about 10/15 minutes. Remove the cookies from the oven even if they are still very soft. Now prepare the ganache. Cut the dark chocolate into pieces, heat the cream in a saucepan and when it is almost boiling, remove from the heat and add the chopped chocolate. Stir well until completely melted. Now the cookies will be well chilled so, with the help of a teaspoon, fill all the holes you made in the cookies with the ganache and then enjoy them.
The original recipe calls for 260 g of sugar, I reduced the amount.
