Usually, Christmas cookies are decorated with many sprinkles and royal icing, just like the famous Gingerbread Cookies, but this time, I decorated these treats with a simple fresh and fragrant lemon glaze, prepared in just a few seconds with only vegan powdered sugar, water, and lemon juice.
It’s a very simple glaze but perfect to enhance the taste of the cookies because it pairs perfectly with the lemon-flavored shortcrust pastry, making the dough even lighter, crisper and you’ll get a citrus cookie that will win everyone over.

- 3.4 oz lemon juice
- 3/4 cup raw cane sugar (or regular sugar for the non-vegan version)
- 1 lemon zest (grated)
- water
- lemon juice
- powdered sugar (vegan or regular for the non-vegan version)

⭐Prepare the dough: In a bowl, pour the sifted flour, add the sugar and then the rest of the ingredients, mix and then work the dough with your hands until you form a nice soft ring.
⭐Roll out and shape the cookies: Roll out the dough to at least half a cm, cut out your cookies using the cutter, place them on a baking tray lined with parchment paper, and bake them at 180°C (356°F) for about 15 minutes but always adjust with your oven. Once cooked, let them cool well
⭐Prepare the glaze: Pour the powdered sugar into a bowl and gradually add the water with a few drops of lemon, mixing until you get a smooth, lump-free consistency
