EGGPLANT PARMESAN IN AIR FRYER

Eggplant Parmesan, a dish that in my opinion needs no introduction. It is a typical Neapolitan dish famous worldwide for its fantastic mix of flavors and colors. Like all recipes, everyone has their own variations. I made the classic version with fried eggplant but cooked it in an air fryer so I can enjoy this wonderful dish even when it’s very hot. Ingredients

EGGPLANT PARMESAN COOKED IN AIR FRYER, A SIMPLE AND TASTY TYPICAL ITALIAN RECIPE

  • 2 eggplants
  • 2.2 lbs canned tomatoes
  • 2 eggs
  • sunflower oil (for frying)
  • 10.5 oz mozzarella
  • salt
  • flour
  • basil
  • Half onion
  • extra virgin olive oil

Steps

LET’S PREPARE EGGPLANT PARMESAN TOGETHER

  • To make eggplant parmesan, first wash the eggplants, remove the stem, and slice them not too thin. Prepare a bowl with flour.

    Dip the eggplant slices in the egg and then flour them on both sides. Pour oil into a pan, and when it is very hot, start frying the eggplants a few at a time

    When they are golden and soft, drain them on absorbent paper. Meanwhile, put the onion with some oil in a pot, let it fry, then pour the tomatoes into the pot, add the basil leaves, and stir. Add some salt and let it all simmer for about 15/20 minutes. Meanwhile, start slicing the mozzarella

    When the sauce is ready, take a baking dish and start assembling the parmesan. Cover the bottom of the dish with some sauce, cover it with a layer of eggplant, cover the eggplant with sauce. Add the mozzarella and then sprinkle with parmesan. Continue layering until the eggplants are finished. Usually, three layers are made. Bake at 356°F for about 35/40 minutes or cook in an air fryer at 392°F for 30 minutes.
