Light cookies with olive oil, no eggs, no butter, no flour ideal if you’re on a diet they are so good everyone eats them, they are great as breakfast cookies but also for a guilt-free snack or to accompany a good afternoon tea.
It’s a light dough without eggs, flour and butter but only oat flakes, fruit oil and enriched with extra dark chocolate that are a bit reminiscent of oat and coffee chocolate cookies but much less caloric indeed they are great for those following a diet like the low carb apple and chocolate brownies
To make these cookies, I used the Thermomix but you can also use a blender or a mixer or blend the oat flakes and then work everything in a bowl like the egg-free and butter-free tart in a bowl. This is a very simple dough that you can adapt according to your taste so get all the ingredients you want and try these delights and I am sure you will win over even those who are not on a diet. But now let’s see what we need to make the light cookies with olive oil, no eggs, no butter, no flour ideal if you’re on a diet they are so good everyone eats them.

- 1 Food processor Thermomix
Steps
LET’S MAKE THE COOKIES
If you don’t have the Thermomix, you can use a powerful blender or mixer and proceed as above. Take portions of the dough as large as you like, form balls, and then flatten them. Arrange the cookies on a baking sheet covered with baking paper and bake at 350 F for about 10 to 15 minutes. Always adjust according to your oven. Remove from oven and let cool. Meanwhile, prepare the glaze. In a small bowl, pour some water and then add cocoa powder, stir until you get a thick but not too dense consistency. Drizzle the glaze over the cookies using a fork and then enjoy this moment of pleasure.
YOU CAN SUBSTITUTE THE CHOCOLATE WITH BERRIES, YOU CAN SUBSTITUTE THE DATES WITH DRIED APRICOTS OR PRUNES
