  • 2 3/4 cups all-purpose flour
  • 1 cup powdered sugar
  • 5.3 oz butter (room temperature)
  • 1 tsp baking powder
  • lemon zest
  • 1 egg (whole)
  • 1 egg yolk
  • 2 pears (medium)
  • apricot jam
  • 1/2 cup powdered sugar
  • 1 egg white
  • apricot jam
  • powdered sugar (for dusting)

LET’S PREPARE THE TART TOGETHER

  • To make the meringue tart, first you need to prepare the shortcrust pastry. Pour the flour into a mound on the work surface, make a well in the center, and add the eggs, soft room temperature butter cut into pieces, lemon zest, sugar, and baking powder. Quickly knead everything together and let it rest in the refrigerator for 20 minutes.

    Butter and flour the tart pan. Divide the dough in half and roll out one half in the pan, cover the surface with jam and then add the thinly sliced pears. Roll out the remaining dough and cover the tart with it, sealing the edges well with a fork. Now prepare the delicate meringue. Beat the egg white with the powdered sugar for a few minutes until it reaches a fairly dense consistency but not as solid as classic meringue. Pour this meringue sauce over the surface of the tart, smoothing it out with a spatula. Slightly warm some jam and then pour it into a piping bag or you can use a pastry syringe and form strips on top of the meringue as if you were making classic shortcrust pastry strips. Bake everything at 356 degrees Fahrenheit for about 30/35 minutes, but always adjust according to your oven. Remove the tart from the oven and dust with powdered sugar. Wait until it is completely cool to enjoy it.
