PUMPKIN AND CINNAMON PANCAKES – the cinnamon roll pancakes

The pumpkin and cinnamon pancakes, the famous cinnamon roll pancakes that went viral on the web thanks to their spiral made of cinnamon, butter, and cocoa, and I must say they are amazing. I had been seeing these delicious pancakes with their very tempting swirl for a while, and since I love pancakes, I had to try them. Then when I saw Diletta Secco’s version with pumpkin, I instantly fell in love and made them immediately. Unfortunately, the picture doesn’t do them much justice, so I will definitely make them again because I covered them with a dark chocolate hazelnut cream to make them even more delicious, while the original recipe calls for a glaze made with powdered sugar and water. Ingredients

  • 4 1/2 oz cooked pumpkin
  • 1/2 cup milk
  • 1 egg
  • 4 1/4 oz all-purpose flour
  • 2 tsps baking powder
  • cinnamon
  • 1 1/2 oz butter (soft)
  • 2 tbsps pumpkin batter
  • 3/4 oz brown sugar
  • 2 tsps unsweetened cocoa powder
  • ground cinnamon

Steps

LET’S PREPARE THE PANCAKES

  • In a bowl, beat the egg yolk with the sugar, add the previously cooked and blended pumpkin, mix in the milk, cinnamon to taste, baking powder, and flour. Whip the egg white to stiff peaks and gently fold it into the mixture.

  • Mix the soft butter with all the other ingredients, be generous with the cinnamon, and place everything in a piping bag. Butter a skillet and start cooking the pancakes. When they start to bubble, form a spiral with the filling, cover with a lid, and let them finish cooking. Place your pancakes on a plate and top them with whatever you like. I used a dark chocolate hazelnut cream.
