The soft and creamy Valentine’s Heart Cake that conquers all
PREPARE THE SPONGE CAKE: In a bowl, pour three yolks and one whole egg with the sugar and start whisking until they are light and frothy. In another bowl, whip the egg whites to stiff peaks with a pinch of salt and set aside. Add the chosen flavoring to the yolks and then fold in the sifted flour gently with a spatula, and finally, gently fold in the whipped egg whites, mixing from bottom to top. Pour everything into the buttered and floured heart-shaped mold and bake at 340°F for about 30 minutes. I used a convection oven. Once cooked, let it cool well.
Prepare the mascarpone cream: Mix the pastry cream with the mascarpone using electric whisks, and you will obtain a light and velvety mixture.

Now assemble the dessert: Slice the heart-shaped sponge cake into three layers, soak the first layer with coffee and then cover it with mascarpone cream, dust with cocoa, and cover with another layer of sponge cake. Soak with coffee and cover with chocolate cream. Finally, close with the third layer of sponge cake, soak it with coffee, add a layer of chocolate cream, and dust with cocoa. Store the cake in the refrigerator and take it out at least 30 minutes before enjoying.
