I have made several unique shortcrust pastries, like the fantastic 5 foolproof shortcrust recipes, from the soft to the crispy, but this one intrigued me from the start because I had never used carrots to make a shortcrust, and I didn’t think it would turn out so good.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 3/4 cup almonds
  • 1/3 cup sugar ((I use brown sugar))
  • 1 egg yolk
  • 3 1/2 oz cooked carrots
  • 1/2 cup butter (cold)
  • lemon zest (grated)
  • 1 teaspoon baking powder
  • jam (I use plum)
  • almonds as needed (coarsely chopped or coarsely grated)
  • powdered sugar (for dusting)

Steps

HOW TO PREPARE THE CARROT TART

  • Put the sugar with the lemon zest in a mixer and blend well, then add the almonds and blend again. Add the butter in pieces and then the cooked and cooled carrots, continue blending. Add the egg yolk and finally the flour with the baking powder. Form a dough, cover it, and let it rest for 30 minutes in the refrigerator. Roll out part of the shortcrust in a tart pan, I used a pan about 10 inches, greased and floured, and put the rest of the shortcrust in the freezer. Spread the jam, I used my plum one, but you can use whichever you like best. Add the coarsely chopped almonds on top of the jam, according to taste, but make sure to cover the entire surface of the tart. With a large-holed grater, grate the rest of the shortcrust over the whole tart. If you don’t have a grater, you can crumble it with your hands. Bake at 350 F for about 35 minutes, but always adjust to your oven. Once done, sprinkle with powdered sugar.
