To make this tart, I used the same shortcrust pastry from the soft and creamy lemon tart which I find fantastic. In reality, it’s a classic shortcrust pastry but with powdered sugar and cold butter, it remains soft and crumbly. This time I chose a delicate lemon cream and berries that I love, and it turned out to be a super soft, crumbly, and creamy tart. - 3 3/4 cups all-purpose flour
- 3/4 cup powdered sugar
- 2 eggs
- 7 oz butter (cold)
- grated lemon zest
- 2 cups water
- 1/2 cup potato starch
- 3/4 cup sugar
- zest of two lemons + juice
- berry jam
- berries (for decoration)

LET’S PREPARE THIS DELICIOUS TART COOKED IN AN AIR FRYER
First, prepare the shortcrust pastry. I put all the ingredients in a mixer, you can also use a Thermomix. I formed a dough and let it rest in the refrigerator for at least 1 hour.
Now prepare the cream. Heat the water, starch, lemon zest, and sugar, and once everything thickens, remove from heat and add the lemon juice. Let the cream cool.
Butter and flour a tart pan, roll out part of the dough, cover the bottom with berry jam, then add the cream and some berries. Make strips and cook in the air fryer for 15 minutes at 400°F in Bake mode or in the oven at 350°F for about 35/40 minutes. Remove from oven, dust with powdered sugar if desired, and enjoy this marvel.
