  • To make tiramisu’, start by preparing the coffee, begin with two moka pots, and then see if you need more. Meanwhile, prepare the mascarpone cream. Separate the yolks from the whites and beat the yolks with the sugar until they are nice and fluffy, then add the mascarpone, mix well, you can also use electric beaters. Now whip the egg whites to stiff peaks and then add them a little at a time to the yolk and mascarpone mixture, mixing gently to avoid deflating everything, you may not need to use all the whipped egg whites; consider that the cream should remain nice and velvety, the whites make it a bit runny, so adjust accordingly. Once the cream is ready, begin assembling the dessert. Dip some of the ladyfingers in the coffee and arrange them in a baking dish to cover the bottom, spread a layer of cream on top, and dust with cocoa, now make another layer of ladyfingers and then cover everything with the remaining cream and dust with cocoa. Put the tiramisu’ in the fridge until it is time to enjoy it.
