Ingredients for air fryer stuffed potato patties
- 10.5 oz Potatoes (raw weight)
- 1.8 oz Grated parmesan cheese
- 3.5 oz All-purpose flour
- 1 tbsp Extra virgin olive oil
- 1 pinch Fine salt
- 1 pinch Ground black pepper
- 1 pinch Nutmeg
- 3.5 oz Cooked ham
- 1 Scamorza
- q.b. Breadcrumbs
- 2 Egg whites

Steps for air fryer stuffed potato patties
To make these delicious stuffed potato patties, first you need to prepare the boiled potatoes, cook the potatoes in water for about 45 minutes or until the fork goes all the way in and the potato crumbles. Mash the potatoes while still hot with the potato masher and place them in a large bowl, add the grated parmesan, salt, pepper, nutmeg, and mix. Finally, add the oil and flour and compact with your hands to obtain a homogeneous and non-sticky mixture, if not, add more flour.
Take a spoonful of the mixture and form patties, then gently flatten them on the palm of your hand and fill with cooked ham, scamorza or mozzarella, and cover with more potato mixture. Compact well, shaping the edges neatly and place the patties on a cutting board with parchment paper. Put in the fridge to set for 30 minutes. Meanwhile, beat the two egg whites in one bowl and pour the breadcrumbs into another. Retrieve the patties from the fridge and bread them by first dipping them in the egg white, then in the breadcrumbs, and again in the egg white and breadcrumbs. This double breading will prevent the filling from coming out during cooking and achieve a crispy coating.
In this case, I chose to cook them in an air fryer, so preheat the air fryer to maximum power for a few minutes. Then place a sheet of parchment paper in the fryer basket and the patties, spray the surface with extra virgin olive oil, and cook at 375°F for about 15-20 minutes or until golden brown. Turn the patties halfway through cooking to cook both sides. If you want to bake the patties, just bake them at 350°F for 30 minutes.

STORAGE, TIPS AND NOTES
Stuffed potato patties can also be prepared in advance and kept in the fridge before cooking. For cooking, you can opt for the lighter method, either in the oven or air fryer, or fry them in a pan using peanut oil. For the filling, you can choose other cold cuts, cheeses, or vegetables of your choice. With this recipe, I made 4 patties, but it often depends on the size you give them.
