It’s a very simple recipe but above all very quick because these delicious calzones or baked turnovers do not require rising. Don’t worry, I assure you they are just as fluffy. Just like the classic way, I filled them with simple tomato sauce and mozzarella, but they can also be filled with cold cuts and cheeses. Ingredients for Baked Calzones Without Rising
- 2 3/4 cups all-purpose flour
- 1/2 cup Water at room temperature
- 1/2 cup Milk at room temperature
- 1 1/2 tbsp extra virgin olive oil
- 1/2 tsp fine salt
- 2 tsp instant yeast for savory preparations
- 5.3 oz tomato sauce
- 7 oz fiordilatte
- to taste fine salt
- to taste dried oregano
- 1 drizzle extra virgin olive oil

Steps for Baked Calzones Without Rising
To make these tasty baked calzones without rising, you first need to prepare the dough. For convenience, I used a stand mixer, but you can knead it all by hand in a bowl if you prefer. Add all the ingredients to the bowl of the stand mixer or any other mixer and knead using the hook attachment for 5 minutes at speed 2 until you get a smooth and homogeneous dough. Form a ball and let it rest for 15 minutes on a pastry board covered with a dishcloth or bowl. Meanwhile, in a small bowl, mix the tomato sauce, salt, oregano, and extra virgin olive oil. Then divide the dough into 4 parts and form balls of about 5.3-5.6 oz each. Lightly flour the pastry board and roll out the balls with a rolling pin. Fill the disks first with some tablespoons of tomato sauce and then with the cubed fiordilatte. Gently close them into half-moons, sealing the edges well. At this point, we can proceed to cooking. You can bake in a preheated static oven at 392°F for about 10-15 minutes or in an air fryer. Today, I chose to use the air fryer cooking, so preheat the air fryer for 5 minutes. Place parchment paper in the basket and lay the calzone on it. Cook at 374°F for about 10 minutes, turning the calzone halfway through, and spread more tomato sauce on the surface and continue cooking for another 5 minutes or until the desired golden color. My air fryer is 6 liters, so it can cook 2 calzones at a time without any issues.
