Ingredients for the baked tagliatelle nests with speck and stracciatella
- 28 oz peeled tomatoes (Or tomato sauce)
- 1 clove garlic
- to taste extra virgin olive oil
- to taste fine salt
- 10.5 oz dry tagliatelle nests (Or fresh)
- 8.8 oz stracciatella cheese (Or burrata then chopped)
- 5.3 oz Speck cubes or strips
- to taste grated Parmesan cheese

Steps for the baked tagliatelle nests with speck and stracciatella
In a saucepan, add the extra virgin olive oil with the garlic and sauté for a few minutes. Add the peeled tomatoes crushed by hand to make them almost into tomato sauce, add the salt and cook for about twenty minutes on low heat until you get a nice thick sauce. Separately, in a pan, sauté the speck for a few minutes.
On the base of a baking dish, place some generous spoonfuls of tomato sauce, place the tagliatelle nests and add to their center the speck, the stracciatella and finally drizzle with more abundant tomato sauce. Lastly, sprinkle the surface with grated cheese that will create a delicious crust during cooking. Bake in a hot oven at 350°F-400°F for about half an hour or 40 minutes. Check the pasta’s doneness before turning off. If you wish, you can use simple mozzarella instead of stracciatella cheese.
Turn off the tagliatelle nests, let cool for a moment, and serve.

STORAGE, TIPS, AND NOTES
