Ingredients for the Black Forest cheesecake
- 1 1/2 cups digestive biscuits
- 1 tbsp unsweetened cocoa powder
- 7 tbsp butter
- 1 cup mascarpone
- 1 cup fresh heavy cream
- 1 cup cherries or sour cherries
- 1/4 cup powdered sugar
- 1 tbsp cherry liqueur (Or maraschino)

- 3/4 cup whipped cream
- chocolate sprinkles

Steps for the Black Forest cheesecake
To make this Black Forest cheesecake, the first thing to do is to prepare the base. Melt the butter in a saucepan. You can also melt it in the microwave. Finely blend the biscuits together with the unsweetened cocoa powder in a food processor, you can replace the plain digestive biscuits with chocolate ones. Pour the butter over the biscuits and compact everything well, placing it in a 8-inch springform pan previously lined with baking paper. Level well with the back of a spoon both the base and the sides creating a shell, and put it in the freezer to set for 20 minutes.
In a bowl, whisk with electric whisks the very cold mascarpone from the fridge with the fresh cream and powdered sugar until you get a fluffy cream.
Take the pan from the fridge or freezer and pour almost half of the cheesecake cream leveling the surface well with the help of a spoon. Gently press the cherries or halved sour cherries without pits in the center of the filling. Cover with more cheesecake cream and add more cherries or sour cherries, finally cover with the last layer of mascarpone cream. Then put the cheesecake in the freezer for about 3-4 hours.
Retrieve the cake from the freezer and gently remove the circle or ring with the help of a hairdryer, also remove the baking paper and place the cake on a serving plate. Let the cheesecake acclimatize in the fridge for a few hours. Finally, decorate the surface with whipped cream, cherries or sour cherries in syrup, and chocolate sprinkles.

STORAGE, TIPS, AND NOTES
The Black Forest cheesecake keeps in the fridge for a couple of days. It can also be prepared in advance and frozen. Once frozen, it lasts for a maximum of 2 days in the fridge. Cherries can be replaced with sour cherries in syrup or candied cherries.
