Ingredients for Cherry Snowball Cookies
- 1 egg yolk
- 1 1/4 cups all-purpose flour
- 1/3 cup butter
- 3/4 cup almond flour
- 1/2 cup powdered sugar
- as needed milk
- 1 teaspoon vanilla extract
- 1 pinch fine salt
- as needed cherry jam
- as needed vanilla powdered sugar

Steps for Cherry Snowball Cookies
First of all, to make these snowball cookies, you can use any kitchen robot or even prepare them by hand using a bowl. For convenience, I used a stand mixer. Add the sifted all-purpose flour and almond flour, powdered sugar, and butter pieces to the mixer bowl and mix carefully at speed 2 using the flat beater. Finally, add the egg yolk, salt, and vanilla extract and mix for a few more minutes until you get a smooth and homogeneous dough (add a little milk if the shortcrust pastry does not come together). Place the shortcrust pastry in plastic wrap and let it rest for just 10 minutes.
With your hands, take small amounts of dough slightly larger than a walnut, flatten the shortcrust pastry in the palm of your hand, and place a teaspoon of cherry jam in the center, seal well and place the cookies on a baking sheet lined with parchment paper and put in the fridge for about half an hour to firm up.
Then bake in a preheated static oven at 356°F for about 10-15 minutes. Turn off, take them out and sprinkle or dust them with vanilla powdered sugar, let them cool, sprinkle again with vanilla powdered sugar, and serve.
