Steps for the Christmas cheesecake
To make this delicious cheesecake, you need to prepare the base first. Melt the butter in a small saucepan and let it cool. Finely chop the cookies in a mixer or food processor. Pour them into a bowl with the cinnamon and add the melted butter, mixing to form a kind of sand. Line the base of an 8-inch springform pan with parchment paper and place the cookie mixture. Level the base well with the back of a spoon and refrigerate to set for about 20 minutes or freeze for 10 minutes.
In a large bowl, add the well-chilled mascarpone, the well-chilled fresh liquid cream along with the powdered sugar, and beat for a few minutes with electric whisks until you obtain a fluffy and thick mixture. Add the orange juice and grated peel, the spices such as cinnamon and ginger to your taste, and gently mix with a spatula until you get a homogeneous mixture. Take the pan from the fridge or freezer and pour the mixture over it. Level the surface well with the help of a spoon or a flat cake spatula and put the cheesecake to set in the freezer for about 3 hours.
Take the cake from the freezer and gently remove the ring or circle using a hairdryer to pass over it, also remove the parchment paper and place the cake on a serving plate. Transfer the cheesecake to the refrigerator to acclimate for 1 hour and then decorate the surface with sprigs of currants, dollops of whipped cream, and star-shaped cookies. And here it is ready to be served, the nougat cheesecake. I hope you like this latest recipe of mine. Until next time, friends.
STORAGE, TIPS AND NOTES
The Christmas cheesecake can be kept in the fridge for up to 2 days. It can also be made in advance. Mascarpone can be replaced with other creamy cheese like Philadelphia or ricotta.
