Ingredients for Christmas Red Velvet Cookies
- 1 egg
- 1/2 cup melted butter
- 3 tbsp unsweetened cocoa powder
- 1 3/4 cup all-purpose flour
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 tbsp red food coloring, preferably
- 1/2 tsp baking soda
- 1 tsp vanilla extract
- 1/2 tsp fine salt
- 1 cup Oreo® cookies

- 1 Stand mixer
- 1 Paddle attachment
- 1 Ice cream scoop
- 1 Parchment paper
Steps for Red Velvet Cookies
In the bowl of the stand mixer, mix using the paddle attachment (K) for a few minutes at medium speed the egg with both sugars and vanilla extract. Melt the butter separately in a bowl in the microwave or in a bain-marie and add it once cooled to the egg mixture and mix. Add the red food coloring and mix thoroughly. Finally, add the sifted flour with cocoa powder, baking soda, and salt and mix again at speed 2 for a few minutes. Finally, add half the crushed Oreo cookies with a knife and the other half in large pieces and continue mixing with a spatula for a few seconds.
Form small balls using the ice cream scoop and place them on a baking sheet lined with parchment paper. Flatten with your hands, place more Oreos on top, and bake in a preheated static oven for about 10/15 minutes at 350°F. Turn off, remove from the oven, and let cool. I made a total of 12 cookies, obviously depending on the size you will give to the shortcrust pastry ball.
