- 1.5 cups room temperature water
- 2 tsp fresh yeast
- 1 tbsp fine salt
- 1.5 tbsp extra virgin olive oil
- 1 tsp malt or honey
- 3.5 oz pitted green olives
- to taste dried oregano
- to taste tomatoes
- to taste extra virgin olive oil to drizzle on the focaccia before baking
- 5 oz cooked ham (Or other deli meat of your choice)
- to taste mayonnaise (Or fresh spreadable cheese)

Steps for the Christmas Stuffed Focaccia Bread
To make this fantastic Christmas stuffed focaccia bread, you need to prepare the dough. Pour the sifted flour into the bowl of the stand mixer, the yeast dissolved in two fingers of water, the honey, and mix using the hook attachment. Gradually add the water and continue kneading. Finally, add the salt and then the extra virgin olive oil and continue kneading until the dough is smooth and elastic. This process will take about 15-18 minutes in total. Be careful not to overheat the dough. This process can also be done by hand using a bowl. When the dough is ready, add the pitted green olives and incorporate them into the dough, give some reinforcement folds, and let it rise in an oiled bowl covered with plastic wrap until doubled in size. If you don’t want to use pitted olives, you can simply omit them. After the dough has risen, place it in a star or Christmas tree-shaped pan, or simply a round pan. For the diameter, you can use a 10-inch pan. Drizzle the bottom of the pan with extra virgin olive oil, place the dough, and spread it with your hands. Let it rise again for an hour.
When the dough has risen, gently press with your fingers and decorate the surface with more green olives, hand-torn tomatoes, plenty of extra virgin olive oil, oregano, and salt. Bake in a preheated static oven at 482°F for 20-25 minutes or until golden brown.
When the focaccia is ready, let it cool completely and fill it with cooked ham and mayonnaise. You can also use lettuce and tomatoes, or whatever fillings you prefer.
