Ingredients for the cookies cheesecake
- 5.3 oz chocolate chip cookies (American)
- 6.3 tbsp butter
- 8.8 oz mascarpone
- 1 cup heavy cream
- 1/3 cup confectioners' sugar
- 1 tsp vanilla extract
- 4 chocolate chip cookies
- 1/4 cup milk
- 2.5 oz dark chocolate
- 1 tbsp honey or glucose syrup

- 1 Springform pan

Steps for the cookies cheesecake
First, to make this cookies cheesecake, you need to prepare the base. In a small saucepan, melt the butter and let it cool slightly. In a food processor, grind the chocolate chip cookies. Pour the cookies into a bowl, add the melted butter, and mix to form a sand-like mixture. Line the base of an 8-inch springform pan with parchment paper and lay the cookie mixture on it. Level the base well with the back of a spoon and place in the fridge to firm up for about 20 minutes or in the freezer for 10 minutes.
In a large bowl, add the mascarpone, chilled from the fridge, the well-chilled heavy cream along with the confectioners’ sugar, and beat for a few minutes with the electric whisks until you get a fluffy and thick mixture. Take the springform pan from the fridge or freezer and pour half of the mixture, lay the halved cookies as shown in the photo, and add the remaining filling. Level the surface well with a spoon or a flat cake spatula and place the cheesecake to firm up in the freezer for about 3 hours. Take the cake from the freezer and gently remove the ring with a pass of a hairdryer, also remove the parchment paper and place the cake on a serving plate. Transfer the cheesecake to the refrigerator to acclimate for 1 hour. Meanwhile, prepare the chocolate glaze. Heat the milk in a small saucepan, then add the chopped dark chocolate and stir vigorously, finally add the honey and let it cool for about 10-15 minutes, stirring occasionally.

STORAGE, TIPS AND NOTES
