Ingredients for the Filled Christmas Cookies
- 1 1/4 cups all-purpose flour
- 1 cup almond flour
- 1/4 cup unsweetened cocoa powder
- 1 egg
- 1/2 cup powdered sugar
- 1/4 cup sunflower oil
- 2 tbsp milk
- 1 tsp baking powder
- 1 tsp vanilla extract
- fine salt
- grated orange zest
- 7 oz orange marmalade
- 3.5 oz finely chopped toasted almonds
- to taste ground cinnamon
- to taste nutmeg

Steps for the Filled Christmas Cookies
To make these wonderful filled Christmas cookies, first prepare the shortcrust pastry. I used a stand mixer with the paddle attachment. If you prefer, you can mix everything by hand in a bowl and then on a work surface. Pour the powdered sugar, all-purpose flour, almond flour, unsweetened cocoa powder, spices, grated orange zest, fine salt, baking powder, oil, and milk into the mixer bowl and mix for a few minutes at speed 2-3. Then add half an egg, not the whole egg, which means you will need to crack an egg in a small bowl, beat it with a fork, and add only half to the mixture. Mix carefully until the dough is completely compact. The dough will be soft and homogeneous. Set aside and prepare the filling.
In a bowl, mix the orange marmalade with the finely chopped toasted almonds, grated orange zest, spices, and mix carefully until you get a homogeneous mixture.
Take the shortcrust pastry and on a work surface lined with parchment paper roll out a 1/8 inch thick sheet and form a rectangle. Place the orange and dried fruit mixture along the center, roll up to form a loaf or roll. Freeze for 30 minutes. After the resting time, cut the loaf into pieces of about 1 inch using a smooth knife. Place each piece on a baking sheet lined with parchment paper and bake in a preheated static oven at 350°F for about 20-25 minutes or until golden. Turn off, take out of the oven, and let cool.

STORAGE, TIPS AND NOTES
