Ingredients for Filled Spritz Cookies
- 5.3 oz soft butter (take out of the fridge 2 hours before)
- 1 egg
- 1.6 cups all-purpose flour
- 0.4 cups potato starch
- 1 tsp vanilla extract
- 3.2 oz powdered sugar
- grated lemon zest
- Nutella® (Or jam or pistachio spread)

Steps for Filled Spritz Cookies
To make these delicious filled spritz cookies, add the soft butter pieces, grated lemon zest, vanilla extract, and powdered sugar to the stand mixer bowl. Attach the wire whisk and run the machine at maximum speed for 5-8 minutes. Add the egg and whip for a few more minutes. Add the sifted flour and potato starch, the salt, and whip for a few more minutes to get a homogeneous, dense yet very soft dough. Those without a stand mixer can also use electric beaters, following the same procedure outlined.
Place the dough in a piping bag with a star tip, and on a baking sheet lined with parchment paper, form the cookies in your desired shape, making sure they’re the same size for pairing. Let the cookies rest in the fridge for 40 minutes, a crucial step to prevent them from flattening during baking. Preheat the oven to 350°F and bake the cookies in the center of the oven with static function for 10-12 minutes. They shouldn’t brown too much. Remove from the oven and let them cool.
Take the cookies and fill them with Nutella, or pistachio spread, or whipped chocolate ganache, or jam. If you like, you can also glaze them in chocolate.
