Ingredients for heart cookies

  • 10.5 oz Cold butter
  • 3/4 cup Powdered sugar
  • 1 Medium egg
  • 1 3/4 cup All-purpose flour
  • 1/2 cup Potato starch
  • 1 teaspoon Vanilla essence (Or 1 packet of vanillin or lemon zest)
  • 1 pinch Fine salt
  • 1 teaspoon Baking powder
  • 1/4 cup Unsweetened cocoa powder
  • A dash of milk if needed to compact

  • 1 Paddle attachment
  • 1 Rolling pin
  • 1 Cutting board
  • 1 Baking sheet
  • Parchment paper

Steps for heart cookies

  • To make these lovely heart cookies, you need to prepare the dough. If you wish, you can make the pastry by hand using a bowl. For convenience, I used the stand mixer. In the bowl of the stand mixer, pour both sifted flours, cold butter from the fridge cut into pieces, vanilla essence, salt, baking powder and mix everything using the paddle attachment at speed 1-2. Once the “sandy” texture is achieved, named so because the mixture resembles sand, add the powdered sugar and the egg, and mix again until you obtain a smooth and homogeneous dough. Divide the dough in half, add sifted unsweetened cocoa powder to one half and incorporate well; if needed, add some milk to form a homogeneous dough. Once the two doughs are ready, wrap them in food wrap and let them rest in the fridge for 1 hour.

  • Take the two doughs out of the fridge, work them with your hands and on a floured surface, using a rolling pin, roll out both doughs to about 1/8 inch thick and form hearts with the help of a heart-shaped cutter. Use the cutter to cut a part of the heart (see photo) and match with the other whole heart-shaped cookie of a different color (see photo). Continue alternating the colors of the various heart cookies.

  • Then place the cookies on a baking sheet covered with parchment paper and bake them in a preheated static oven at 356°F for about 13 minutes, they should not brown too much.

STORAGE, TIPS AND NOTES

Heart cookies can be stored in tin containers or airtight containers for up to 10 days. The pastry dough can also be prepared in advance, like the night before, and it can be frozen for 1 month.
