Ingredients for Lebkuchen, Traditional German Christmas Cookies

  • 1 1/2 cups all-purpose flour
  • 3/4 cup almond flour
  • 1 egg
  • 2 tbsp acacia honey
  • 1/3 cup brown sugar
  • 3 tbsp butter
  • 2 tbsp milk
  • 1 tsp baking soda
  • 2 tbsp unsweetened cocoa powder
  • to taste ground cinnamon
  • to taste nutmeg
  • 1 tsp ground cloves
  • 1 pinch fine salt
  • 2 1/2 oz candied orange
  • 2 1/2 oz candied citron

Steps for Lebkuchen, Traditional German Christmas Cookies

  • To make Lebkuchen, traditional German Christmas cookies, first prepare the dough. You can knead everything by hand in a bowl or use any kitchen robot. For convenience, I used the stand mixer. In a small saucepan, melt the butter with the honey and sugar. In the stand mixer’s bowl, pour the all-purpose flour, baking soda, unsweetened cocoa powder, almond flour, spices, salt, the butter and honey mixture, milk, and finally the egg, and mix thoroughly using the leaf attachment (K). Add the candied orange and citron and mix until you get a homogeneous and sticky dough. Place the dough in the fridge for 30 minutes. Use a spoon to take the dough and form balls of about 1.2 oz each, place them on a baking sheet lined with parchment paper, ensuring they are spaced apart. Press them slightly with the palm of your hand and bake in a preheated static oven at 350°F for about 10-12 minutes. Remove them from the oven and let them cool.

  • Melt dark chocolate in a bain-marie, glaze the surface of each cookie, and decorate with colored sprinkles, chopped almonds, or milk chocolate.
