- 2 1/4 cups all-purpose flour
- 2 tbsp potato starch
- 2 eggs
- 2/3 cup granulated sugar
- 2 tbsp lemon juice
- to taste grated lemon zest
- 1/2 cup melted butter
- 1 tsp baking powder
- 1 pinch fine salt

Steps for lemon curd cookies
To make these fantastic cookies, you need to prepare the shortcrust pastry. In a bowl, mix the eggs with the granulated sugar, lemon juice, and grated lemon zest using a whisk. Pour in the previously melted butter and mix thoroughly. Finally, add the all-purpose flour, potato starch, salt, and baking powder and knead with a spatula until a soft and homogeneous dough is obtained. Put the dough in the fridge to rest for a couple of hours.
Break off small amounts of dough with your hands, about 1 oz each, and form balls. Roll them in a deep dish with powdered sugar so they are completely covered. Place the balls on a baking sheet lined with parchment paper and use a small sieve to press each ball, creating a hollow.
