Ingredients for the Mini Pizzas
- 4 cups Caputo Nuvola flour (Or 1 3/4 cups of all-purpose flour and 1 3/4 cups of bread flour)
- 7 oz water at room temperature
- 2/3 cup milk at room temperature
- 1 tbsp fine salt
- 2 tsp fresh yeast (Or 1 tsp of dry yeast)
- 1 1/2 tbsp extra virgin olive oil
- 1 1/2 tbsp honey or malt
- as needed tomato sauce
- as needed dried oregano
- as needed extra virgin olive oil
- 1 scamorza cheese
- green olives (Optional)

- 1 Stand mixer
- 1 Hook attachment
- 1 Bowl
Steps for the Mini Pizzas
To make these yummy mini pizzas, first prepare the dough. Pour the sifted flour into the stand mixer bowl, add the fresh yeast dissolved in a few tablespoons of water, the honey, and mix using the hook attachment. Gradually add the water and milk, mixed together, little by little and continue kneading. Finally add the salt, then the extra virgin olive oil, and continue kneading until the dough is elastic. It will take approximately 16 minutes. Be careful not to overheat the dough. This process can also be done by hand using a bowl or any kitchen robot. When the dough is ready, give it a few strengthening folds and let it rise in an oiled bowl covered with plastic wrap until it doubles in volume. This will take about 3 hours.
When the dough has risen, form balls or spheres weighing about 1.6-1.8 oz each, place each ball on a baking sheet lined with parchment paper, and let them rise at room temperature for about 1-2 hours. After rising, slightly press down the surface of the mini pizza and place or spread a tablespoon of tomato sauce, oregano, a pinch of salt, and a generous drizzle of olive oil.
Then bake at 392°F for about 10-12 minutes, depending on your home oven.
For the last 2 minutes, place the diced scamorza on top and olives, then return to the oven.

STORAGE, TIPS AND NOTES
