  • 2 3/4 cups all-purpose flour
  • 1 cup potato starch
  • 1 1/8 cups butter
  • 1 1/4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 pinch fine salt
  • 1 egg
  • 3 1/2 oz dark chocolate
  • 3 1/2 oz milk chocolate
  • 3 1/2 oz white chocolate
  • to taste granulated sugar
  • as needed hazelnut crumbs (Or almonds)
  • to taste strawberry jam

Steps for the mixed cookies box, single dough

  • To make this delicious mixed cookies box, start by preparing the shortcrust pastry. First, you can use a stand mixer or any kitchen robot, or simply knead everything by hand in a bowl. For convenience, I used the stand mixer. In the mixer bowl, pour and sift the all-purpose flour and potato starch, add the cold cubed butter, salt, and vanilla extract. Mix everything to achieve the famous “sandblasted” texture, so-called because it resembles sand. Finally, add the powdered sugar and the egg, and mix again until you get a smooth and homogeneous dough. Take a third of the dough and add cocoa powder, kneading with your hands to create dark cocoa dough. Compact both shortcrust pastries and let them rest in the fridge wrapped in plastic wrap for 1 hour. You can also make the shortcrust pastry the day before.

  • To make the gingerbread man, simply roll out the cocoa shortcrust with a rolling pin and use a gingerbread man cutter to cut out the shapes. With the white shortcrust, cut out small hearts to place in the center of the belly. Also make gingerbread men with the white shortcrust, and use the cocoa dough to make small stars and place them in the center of the belly. With the other cocoa shortcrust, make the horseshoe cookie by rolling out a small cord and closing it to form a C.

  • Using the remaining white shortcrust, cut out the other cookies. Simply roll out the dough using a rolling pin and cut out with the various cutters you have available. You can also make filled cookies, with half of them whole and the other half with a cut-out center in star or heart shapes. Place all cookies on a baking tray lined with parchment paper and bake in a preheated static oven at 350°F for 13-15 minutes.

  • When the cookies are baked and cooled, decorate them as desired using previously melted dark, white, and milk chocolate. Let them dry completely for an hour. For the filled cookies, you can use jam or Nutella. If you choose to make Dutch cookies, simply glaze them with white chocolate and dip them in granulated sugar.
