Ingredients for Nutella Stuffed Brioche

  • 2 1/3 cups Caputo Nuvola flour (Or 1 1/4 cups of manitoba flour and 1 1/4 cups of all-purpose flour)
  • 1/4 cup granulated sugar
  • 1/2 cup Milk at room temperature
  • 1 egg
  • 1/4 cup soft butter
  • grated orange zest
  • 2 tsp fresh yeast (Or 1/2 tsp of dry yeast)
  • 1 tsp fine salt
  • Nutella®

  • 1 Baking sheet
  • 1 Wooden spoon
  • 1 Pastry syringe

Steps for Nutella Stuffed Brioche

  • To prepare these delicious Nutella stuffed brioche, the first thing to do is to make the brioche dough. I used the stand mixer, but you can also knead it all by hand in a large bowl and then on a work surface. In the mixer bowl, add the sifted flour, vanilla, grated orange zest, yeast dissolved in a few tablespoons of milk, and granulated sugar, and knead for a few minutes at speed 1-2 using the hook attachment. Then add the egg and let it knead for a few more moments. Then gradually add the remaining milk and continue kneading. Also add the salt. Finally, add the soft butter in small pieces, making sure it is well incorporated, and continue kneading. It will take at least 15-18 minutes in total to obtain a smooth and homogeneous dough, or until the dough is well kneaded. Let the dough rise in a large bowl covered with food wrap for about 2-3 hours in the oven with the light on.

  • When the dough has tripled in volume, pour it onto a floured work surface and gently take some pieces of dough to form balls of about 1.4 oz each. Place them on a baking sheet lined with parchment paper and let them rise covered for another 1-2 hours. When they have doubled in volume, bake in a preheated static oven at 355°F for 10-13 minutes or until lightly golden. Do not bake them too long. Remove from the oven and let cool for a few minutes, then while still warm, using the handle of a wooden spoon, make a hole from the bottom or side. Fill them with Nutella using a pastry syringe or piping bag.

STORAGE, TIPS, AND NOTES

I recommend enjoying the stuffed brioche on the same day or the day after. Without filling, they can be stored for a couple of days in food bags.
