Ingredients for Red Velvet Muffins
- 3 eggs
- 3/4 cup all-purpose flour
- 2 tbsp unsweetened cocoa powder
- 1/2 cup granulated sugar
- 1/4 cup room temperature milk
- 15 red food coloring (decor)
- 1/4 cup sunflower oil
- 1 1/2 tsp baking powder
- 1 tsp vanilla extract
- 1 pinch fine salt
- 1 cup mascarpone
- 1 cup fresh heavy cream
- 1/2 cup powdered sugar
- 3/4 cup raspberries
- mint

- 1 Piping bag
- 1 Muffin tin
- 1 Star tip
- 1 Spoon
- 1 Spatula
Steps for Red Velvet Muffins
To make these delicious red velvet muffins, start by preparing the batter. In a large bowl, beat the eggs with sugar and vanilla extract for 15 minutes until foamy and whitish. Add the red gel food coloring from the brand decor (I mostly recommend this food coloring because I find it the best for achieving the right color), also pour in the sunflower oil slowly and the milk, and continue beating. Finally, add the previously sifted flour, cocoa powder, baking powder, and salt, and stir again with a spatula from bottom to top without deflating the mixture until you get a smooth and homogeneous mixture. Pour the obtained mixture into a piping bag, or if you don’t have one, you can use a spoon. Place the paper liners in the muffin tray, fill them 3/4 full, and bake in a preheated static oven at 350°F for about 15 minutes or do the toothpick test.
In a bowl, whip the well-chilled mascarpone from the fridge with the fresh cream and powdered sugar using electric beaters until you get a fluffy cream.
Place the obtained cream in a piping bag fitted with a star tip and decorate the top of each muffin. Finally, place the raspberries and fresh mint. And there they are, ready to serve. I hope you like my latest recipe, see you next time friends.
STORAGE, TIPS AND NOTES
Red velvet muffins can also be filled with any other cream. They can be stored for a couple of days in the fridge in airtight containers. If you don’t fill them, they can be kept at room temperature for 3-4 days instead.
