  • 3/8 cups Room temperature water
  • 3/8 cups Room temperature milk
  • 2 3/4 cups All-purpose flour
  • 2 tbsp Extra virgin olive oil
  • 1/2 tsp Fine salt
  • 2 tsp Instant yeast for savory preparations
  • 5 1/4 oz Diced speck (Or cooked ham, salami, raw ham, pancetta, etc…)
  • 1 Scamorza
  • as needed Milk+oil for brushing

Steps for Preparing the Savory Bomboloni Without Leavening

  • To make these delicious savory bomboloni without leavening, you first need to prepare the dough. For convenience, I used a kitchen robot, but you can knead everything by hand in a bowl if you prefer. In the bowl of the stand mixer or any other robot, add all the ingredients and knead using the hook attachment for 5 minutes at speed 2 until you obtain a smooth and homogeneous dough. Form a ball and let it rest for 15 minutes on a worktop covered with a cloth or bowl. Divide the dough into 8 equal balls of the same weight (approximately 80-90 g or around 3 oz), lightly flour the worktop, and roll out the balls with a rolling pin. Stuff the discs first with speck and then with the scamorza cut into cubes, and close by forming a ball, sealing the closure well. Place the bomboloni in the air fryer basket, brush the surface with milk and oil, and cook at 356°F for about 10-12 minutes or until golden. 5 minutes before turning off, flip the bomboloni and continue cooking. In the oven, bake at 356°F for 20 minutes. Turn off, remove from the oven, let cool slightly, then serve.
