Ingredients for the savory puff pastry ring
- 1 Rectangular puff pastry roll
- 2 zucchini
- 1 Thick slice of speck
- 3.5 oz emmentaler
- 3.5 oz scamorza
- to taste fine salt
- to taste Ground black pepper
- 1 dash extra virgin olive oil
- 1 Egg yolk for brushing

Steps for the savory puff pastry ring
To make this delicious savory puff pastry ring, first cook the zucchini. Wash and trim the ends of the zucchini, then grate them using a large-holed grater, and sauté in a pan with a dash of extra virgin olive oil, salt, and pepper. Cook for about ten minutes covered over medium-low heat. Turn off the heat and let cool. Unroll the puff pastry and arrange along the longer side of the pastry, leaving the edge clean, the sautéed zucchini, then the speck cut into cubes, the Emmental in cubes, and finally the slices of scamorza on top. On the other end, make small cuts. Brush all edges with the yolk to seal the filling (see photo) and roll up the pastry carefully. Form a sausage shape, connect it into a ring, and place on a baking tray lined with parchment paper. Brush the entire surface with the beaten yolk and bake in a preheated static oven at 356°F for about 30-40 minutes or until golden. Once it has reached a golden color, turn off the oven, remove from the oven, and let cool.
