Ingredients for Soft Nutella Cookies

  • 2 1/8 cups all-purpose flour
  • 1/3 cup potato starch
  • 2 eggs
  • 3/4 cup granulated sugar
  • 1/2 cup melted butter
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 pinch fine salt
  • as needed Nutella®
  • as needed powdered sugar for coating

Steps for Soft Nutella Cookies

  • To make these fantastic soft cookies, you need to make the shortcrust pastry. In a bowl, mix with a hand whisk the eggs with the granulated sugar and vanilla. Pour in the previously melted butter and mix thoroughly. Finally, add the all-purpose flour, potato starch, salt, and baking powder, and knead with a spatula to obtain a soft and homogeneous dough. Place the dough in the refrigerator to rest for a couple of hours.

  • Break off small amounts of dough with your hands, about 1 oz each, and form balls. Roll them in a deep plate with powdered sugar so that they are completely covered. Place the balls on a baking sheet lined with parchment paper and, with the help of a small sieve, press each ball to create a groove. Place a teaspoon of Nutella in the center. Bake in a preheated oven at 350°F for 10-12 minutes or until lightly golden. Turn off the oven, remove, and let cool completely without touching them.

STORAGE, TIPS AND NOTES

Soft Nutella cookies can be stored in airtight or tin containers for a few days. Melted butter can be replaced with sunflower oil.
