Ingredients for the Soft Peach Cake

  • 5.3 oz egg white (Or 3 eggs)
  • 1.5 cups all-purpose flour
  • 1/3 cup sunflower oil
  • 2 tsp baking powder
  • 5.3 oz plain Greek yogurt
  • 1 tsp vanilla extract
  • 1 pinch fine salt
  • to taste grated lemon zest
  • to taste hazelnut pieces
  • 2 nectarines (Or white or yellow peaches)
  • 3 nectarines (Or white or yellow peaches)
  • 3 tbsp granulated sugar
  • 1 oz water

Steps for the Soft Peach Cake

  • To make this delicious soft peach cake, first prepare the sautéed peaches. Wash and thinly slice the nectarines and place them in a pan with the granulated sugar and water, and cook over the heat for about 8-10 minutes, just enough time to caramelize the peaches. Turn off the heat and let cool.

  • In the bowl of a stand mixer or using a bowl, pour in the sugar with the egg whites and start the machine at speed 4 for 30 seconds. If you are using an electric whisk, it will take 5 minutes. Then add the Greek yogurt, sunflower oil, vanilla extract, and grated lemon zest and mix for another 50 seconds at speed 4 or whisk with the electric whisk for a few minutes. Add the sifted flour with the pinch of salt and mix again for 50 seconds at speed 5, finally add the baking powder and mix for another 20 seconds. Obviously, with the electric whisk, it will take a couple of minutes.

  • Pour half of the mixture into a previously buttered and floured 25×25 inch square pan and arrange the sautéed peaches, pour the rest of the batter, and finally add the 2 previously washed and thinly sliced nectarines on top.

  • Sprinkle the hazelnut pieces on top and bake in a preheated static oven at 347°F for 40 minutes. Do the toothpick test, turn off, remove from the oven, and let cool.

STORAGE, TIPS AND NOTES

The soft peach cake can be stored for a couple of days, better in the fridge. Thanks to the presence of yogurt and egg whites, the batter will be very soft. If you want, you can replace the nectarines with other fruits of your choice.
