Steps for Stewed Meatballs

  • To make these delicious stewed meatballs, first prepare the mixture. In a bowl, mix together the veal, eggs, finely chopped parsley, sandwich bread previously softened in a little milk and well squeezed, grated Parmesan cheese, salt to taste, a pinch of pepper, nutmeg, and finally the breadcrumbs. Mix it all well by hand until you obtain a homogeneous and soft but compact dough. Place the dough in the fridge to set for 10 minutes. Meanwhile, prepare the vegetable broth and keep it warm. Peel the carrots and cut them into small cubes. After 10 minutes, make the meatballs, roll them in flour, and place them on a tray.

  • In a large pan, add the extra virgin olive oil, chopped onion, and sauté for a few minutes. Add the carrots and continue to sauté for 5 minutes. Place the meatballs and cook them for a few minutes on both sides, sealing the meat well. Once you notice the crust, deglaze with white wine and let it evaporate. Adjust salt and pepper, and start cooking the meatballs by sprinkling with broth little by little. Cook with a lid for about 30 minutes or until the meatballs are tender and a creamy sauce forms.

  • Once the stewed meatballs are ready, place them on a serving plate and serve with a sprinkle of chopped parsley. I hope you like my latest recipe, see you next time, friends.

STORAGE, TIPS, AND NOTES

Stewed meatballs can be stored in the fridge for a couple of days. If you want to make them gluten-free, simply replace all-purpose flour with rice flour and use gluten-free breadcrumbs and sandwich bread.
