Very useful recipe for vegans and vegetarians, but I assure you that even though I am an omnivore, I use it often because I find it light and delicate, and it’s suitable for many preparations. Ingredients for vegan bechamel

  • 1/3 cup all-purpose flour (Or gluten-free version (rice flour))
  • 2 cups vegetable broth (Or soy or rice milk)
  • 2 tbsps extra virgin olive oil (Or vegetable margarine or vegan butter)
  • to taste nutmeg
  • to taste fine salt
  • 1 pinch black pepper

Tools

  • 1 Saucepan
  • 1 Small pot
  • 1 Whisk

Steps for vegan bechamel

  • To make homemade vegan bechamel, first prepare the vegetable broth in advance and keep it warm. In a separate small pot, heat the extra virgin olive oil and gradually add the flour. Stir quickly with a wooden spoon and as soon as the mixture detaches from the pot and forms a white coating, the roux is ready. Turn off the heat and pour the roux into the vegetable broth, whisking quickly until it thickens completely. Finally, add salt, pepper, and nutmeg, and mix well.
