Ingredients for Whipped Caramel
- 6.35 oz granulated sugar
- 3.5 tbsp butter
- 1/2 cup fresh liquid cream

Steps for Whipped Caramel
To make this delicious whipped caramel, place the granulated sugar in a small pot and melt over medium-low heat until you get a dark caramel (ideal temperature 338°F). Add the butter in pieces and melt completely. Meanwhile, in another pot, heat the cream until almost boiling. Slowly pour the hot cream over the caramel, being careful not to burn yourself, and mix with a wooden spoon until you get a smooth and homogeneous mixture.
Pour the caramel into a bowl and let it rest at room temperature for 20 minutes. Then place the bowl in the fridge for 15 minutes. Take the bowl out of the fridge and start whipping with electric beaters for one minute. Place the bowl in the freezer for 15 minutes this time. Take it out of the freezer and whip the caramel with the electric beaters until it becomes light and fluffy. It’s ready.

STORAGE, TIPS, AND NOTES
To make whipped caramel, heat the cream until it starts to steam and is almost at boiling point. But do not let it boil. Remember not to stir the caramel initially with a spoon, better to rotate the saucepan. Only when it becomes liquid can it be gently stirred. To avoid getting dark and bitter caramel, melt it over medium-low heat. If you want to make vegan whipped caramel, just replace the butter with margarine and the fresh cream with plant-based cream. For perfect whipped caramel, the mixture should be very cold.
