  • 7 oz almonds
  • 1 egg white
  • 3/4 cup powdered sugar
  • to taste ground cinnamon
  • 1 pinch ground cloves
  • 1 pinch fine salt
  • 1 teaspoon vanilla extract
  • 3/4 cup powdered sugar
  • to taste hot water

Steps for Zimtsterne (German cinnamon cookies)

  • First, to make these Zimtsterne cookies, you need to finely process the almonds in a mixer. Pour the ground almonds into a bowl and add salt, ground cinnamon, and cloves, then mix. In another bowl, beat the egg white with the electric beaters along with the powdered sugar added gradually to obtain a whitish mixture. Add the powders to the egg white mixture and blend carefully to get a soft, homogeneous, and sticky dough. Wrap the dough in plastic wrap and let it rest in the refrigerator for 1-2 hours. Take the dough out of the fridge and roll it out on a work surface generously dusted with powdered sugar using a rolling pin. The indicated thickness is about 1/5 inch, then cut out star shapes with a cookie cutter. Occasionally moisten the cookie cutter with water to avoid sticking the dough. Place all the stars on a baking tray lined with parchment paper and bake in a preheated static oven at 340°F for 10-12 minutes.

  • Remove from the oven and let them cool completely. Now let’s prepare the glaze. In a bowl, add the powdered sugar and water as needed (just a drop) to obtain a fluid, dense, sticky whitish cream. Be careful to use very little water. Glaze the surface of all the cookies using a piping bag or a toothpick. Let dry completely for a few hours or overnight.

STORAGE, ADVICE, AND NOTES

Zimtsterne can be stored in airtight or tin containers for several days. So you can make them in advance before Christmas arrives. If you wish, you can traditionally make the glaze with egg white, but I preferred the water one which is equally tasty.
