- 2 medium zucchinis
- to taste extra virgin olive oil
- Half garlic
- to taste mint
- to taste fine salt
- to taste vinegar

Steps for Zucchini alla Scapece in Air Fryer
To make zucchini alla scapece in the air fryer, first wash two zucchinis, remove the ends, and slice into rounds that are not too thin or too thick, as they may burn during cooking. For this reason, I recommend slicing them with a knife rather than a mandoline. Place the zucchini in a bowl and drizzle with a heaping tablespoon of extra virgin olive oil, mixing evenly. You can also use your hands to ensure all zucchini are well coated. Preheat the air fryer to 392°F for 5 minutes. Take the basket of your air fryer and distribute the zucchini rounds as seen in the photo, ensuring they are not stacked to allow perfect cooking. Then cook for about 15-20 minutes at 383°F. Occasionally shake the basket a couple of times during cooking; you can also use simple kitchen tongs. They will be cooked when they are golden and evenly done on both sides.
Once the zucchini are cooked, transfer them into a bowl and season with more extra virgin olive oil, vinegar, salt, mint, and finely chopped garlic if preferred.
