Ingredients for the Zucchini Bundles
- 2 Medium Zucchini
- 5.3 oz mortadella (Or any other cold cut)
- 10.6 oz fiordilatte (Or scamorza or any other cheese)
- 1 egg
- as needed breadcrumbs
- fine salt

- 2 Bowls
- 1 Cutting board
- Air fryer
Steps for Zucchini Bundles
First, to make these bundles, wash the zucchini, cut off the two ends, and using a mandoline or a peeler, make several thin slices. Place them on a baking sheet, sprinkle with fine salt, and let them rest for 30 minutes. Then pat them dry with paper towels and arrange on a cutting board by placing 2 zucchini slices next to each other; cross over 2 more slices, intertwining them. In the center, place a slice of mortadella and a slice of fiordilatte, and close by crossing the edges of zucchini. Place the bundles with the closure facing down.
Take two bowls, beat an egg with a fork in one, and pour the breadcrumbs in the other. Dip all the bundles in the egg and then in the breadcrumbs, making sure they adhere well on all sides. Cook the bundles in an air fryer with a drizzle of extra virgin olive oil at 375°F for 18 minutes. Turn them halfway through cooking. Alternatively, they can be baked in the oven at 355°F for 20-30 minutes or fried in hot peanut oil for a few minutes on each side.
