Ingredients for zucchini, tuna, and mozzarella fritters

  • 0.42 cup milk
  • 1 egg
  • 1.25 cup all-purpose flour
  • 2.7 tbsp vegetable oil or extra virgin olive oil
  • 0.21 cup grated Parmesan cheese
  • 2 zucchini
  • Half packet instant yeast for savory preparations
  • 1 tsp fine salt
  • black pepper
  • chopped parsley
  • 2.8 oz canned tuna in olive oil, drained
  • 3 mozzarellas
  • peanut oil for frying

Steps for zucchini, tuna, and mozzarella fritters

  • To make these amazing zucchini fritters, you need to beat the egg with the milk and sunflower oil in a bowl with a hand whisk for a few minutes, then add the grated Parmesan cheese and continue to mix thoroughly. Finally, add the sifted flour, instant yeast, salt, and ground pepper, and mix again for a few minutes. Pour the chopped parsley, previously washed and diced zucchini into the batter, and mix thoroughly with a spatula. Lastly, add the previously drained tuna and diced mozzarella, and combine everything to obtain a homogeneous and sticky mixture.

  • Pour peanut oil into a pan and heat it to a temperature of 320°F-340°F. Take the batter with 2 spoons and place it in the oil. Cook both sides for a few minutes, then drain them on a tray covered with parchment paper or paper towels. Continue until all the batter is used. I recommend cooking 4-5 fritters at a time.
