- 1.8 oz cornstarch
- 7/8 cup all-purpose flour
- 3/4 cup sugar

- 7 tbsp butter
- 3.5 tbsp milk

- baking powder (1 packet)

Preparation
To make the apple and cinnamon cake, first melt butter in the microwave or in a double boiler, and set aside. Grate the lemon zest, avoiding the white part, which would be bitter.
In a bowl, place the butter at room temperature with the sugar and start mixing vigorously.
Add the eggs and continue mixing with a mixer or stand mixer until you obtain a frothy mixture. Continue for about 10 minutes to incorporate a lot of air which is needed to make the cake rise.
Add the grated lemon zest, the milk at room temperature, and mix.
Sift the flour with the baking powder and add it to all the ingredients, reducing the speed.
We obtain a dense and creamy mixture. At this point, add the apples cut into thin slices, or you can grate them and add them as a puree into the batter. Add the ground cinnamon and mix.
Bake the apple cake in a preheated oven: if fan-assisted at 320°F if static at 356°F for about 50 minutes. Always check the cooking by doing the toothpick test. Remove the cake from the oven and let it cool. Once the cake has completely cooled, remove it from the pan and sprinkle with powdered sugar.
