This is Grandma’s recipe, a soft and delicious focaccia where tomatoes sink in, and each bite is a delight. It’s made solely of semolina, the same kind used to make Apulian orecchiette. A simple dough with high hydration, about 80% water. I remember Grandma used to knead it a lot by hand, but today, with a stand mixer or food processor, you save all the effort. Ready to lick your fingers from this wonderful focaccia? Whenever I make it, I eat a lot of it.
