Green lasagna made with the pasta maker is a delicious fresh pasta specialty, prepared with the help of my trusty pasta machine. To create this recipe, I used the specific die for lasagna format, included in the pasta maker package. The characteristic green color of the lasagna is obtained thanks to the addition of fresh spinach, which gives a touch of liveliness and a unique flavor to the pasta.
Making fresh pasta is extremely versatile: you can use flour, water, or eggs as a base, and enrich the dough with spices, aromatic herbs, vegetable extracts, or other ingredients to customize taste and color. In my green lasagna recipe, I chose to use semolina flour, combined with eggs and pureed spinach as liquid ingredients, creating a rich and flavorful dough. However, each recipe can have different variations depending on preferences.

Ingredients for Green Lasagna with Pasta Maker

  • 2 1/2 cups semolina flour
  • eggs (2)
  • tsp olive oil (one teaspoon)
  • 3 1/2 oz spinach, cooked, boiled (pureed)

I used the lasagna die, which can also be used to prepare cannelloni or ravioli. A strip of pasta comes out of the machine that can be cut to the desired size and then filled to taste.

Preparation of Green Lasagna

THE PASTA MAKER HAS TWO PROGRAMS:
Regular pasta program:
You can make pasta with just water and flour.
Egg or flavored pasta program:
You can prepare pasta with flour or other ingredients such as eggs or vegetable juice, and even for making cookies.



  • Open the lid and add the flour to the pasta machine. Close the lid.

  • Turn on the appliance. Select program 1 (for flour and water) or 2 (for flour with eggs or juices) and press Start.

  • My device automatically measures the liquids — an extra advantage!

  • 3. Slowly pour the liquid (eggs + water or water and oil and pureed spinach) into the lid opening.

  • The dough should be quite grainy which is entirely normal.

  • 4. The pasta will be ready after about 3 minutes. Cut the pasta according to the desired format. The pasta is extruded rather grainy, which is entirely normal.

You can purchase bronze dies. These dies allow you to obtain thin, rough pasta that absorbs the sauce better with perfect performance. For bronze dies, you need an ADAPTER to fit them to the machine.

STORAGE AND NOTES

Fresh pasta can be stored in the fridge for a few days. Sprinkle it with a bit of flour to prevent it from sticking. The pasta can be frozen. You can DRY PASTA

The pasta maker has an accessory drawer for storing dies and included cleaning tools. Cleaning the components (plastic dies) is quite simple, they are dishwasher safe, and for dies that are harder to clean, just put them in the freezer before cleaning. To easily clean the components: the mixing hook, disc holder, and plastic container should not be put in the dishwasher but instead, let the leftover pasta dry, so it peels off very easily.

Cooking times depend on the pasta format. Thinner pasta cooks in 4-5 minutes, thicker in 6-8 minutes.
