- 7/8 cup (200 ml) milk
- 1/2 cup (90 g) sugar
- 1 egg
- 3/4 cup (200 ml) fresh cream
- 5/8 cup (160 ml) mint syrup
- 2 3/4 tbsp (40 ml) water
Tools
To make mint ice cream, you will need some tools and equipment to simplify the preparation process. Remember that some tools, like the ice cream maker, may not be necessary if you follow a recipe that doesn’t require such equipment. Adapt to your needs and the availability of tools to create your delicious homemade mint ice cream. Here are some of the common tools used to make mint ice cream:
- 1 Ice Cream Maker
- 1 Bowl
- Whisk
- Blender
- Container
- Spoon
Steps
Pour the milk and sugar into a saucepan and bring to a boil. In a bowl, crack an egg and beat it with a whisk. Once the milk reaches a boil, remove the saucepan from the stove and pour the liquid into the bowl with the egg, mixing well until a smooth mixture is obtained. Let it cool. Add the mint syrup, liquid cream, and water to the bowl with the egg and mix with a whisk until a light green mixture is obtained. Pour the mixture into the ice cream maker and turn it on. Let the ice cream maker work the mixture for about 50-60 minutes, or according to the manufacturer’s instructions. Once the ice cream has reached a thick consistency, it is ready to be served. You can transfer it to cups or ice cream cones and enjoy it immediately or store it in the freezer in an airtight container for later consumption.
HOW TO MAKE MINT ICE CREAM WITHOUT AN ICE CREAM MAKER
Pour the milk and sugar into a saucepan and bring to a boil. In a bowl, crack an egg and beat it with a whisk. Once the milk reaches a boil, remove the saucepan from the stove and let it cool. Pour the liquid into the bowl with the egg, mixing well until a smooth mixture is obtained.
Whip the cream
Make sure you have a large, clean, and well-chilled bowl available. You can place it in the refrigerator for a while before starting. Pour the cream into the chilled container. Make sure it is fresh and well-refrigerated for at least 3 hours. Prepare the electric whisks and make sure they are clean. Start whipping the cream at low or medium speed for a few seconds to avoid splashes. Gradually increase the speed of the electric whisks. Continue whipping until the cream begins to thicken and traces of the whisks form on the surface. Observe the consistency of the cream as you whip it. It will be ready when it forms soft peaks, meaning that when you lift the whisks, the cream will lift up forming soft peaks that hold steady. Ensure that the mint mixture is completely cold. You can put it in the refrigerator to speed up the cooling process, if necessary.
MAKE THE MIXTURE
Take the whipped cream and, with gentle movements, start incorporating it into the mint mixture. It is important to mix carefully from bottom to top to avoid deflating the cream. You can use a silicone spatula for this purpose, to have better control over the movements. Continue mixing gently until the whipped cream is completely incorporated into the mint mixture. Prepare a suitable bowl for freezing. You can use a steel bowl, which has been previously kept in the freezer to make it colder. If you don’t have a steel bowl, you can also use a glass, ceramic, or plastic bowl, but make sure it has a lid. After pouring the mixture into the bowl and covering it with the lid, place it in the freezer.
FREEZING PHASE
After 30 minutes, take the bowl out of the freezer and stir the mixture with a wooden spoon. After 30 minutes, repeat the stirring process with the wooden spoon. Mix thoroughly to ensure a homogeneous consistency.
Repeat the freezing cycle for another 30 minutes and stirring for 3 more times, for a total of 4 cycles of 30 minutes each. After the last stirring, leave the mint ice cream in the freezer until it reaches the desired consistency. Usually, it will take several hours, about 6 or even overnight, to get a well-frozen and creamy ice cream.
ADDITIONS…
After the last stirring of the mint ice cream, you can add chopped dark chocolate or chocolate chips directly to the mixture. Make sure the chocolate is of good quality and suitable for ice cream preparation. Gently mix the chocolate into the mint ice cream to distribute it evenly. Once the chocolate is incorporated, place the bowl back in the freezer and let the ice cream freeze for at least 6 hours or preferably overnight. This will allow the ice cream to solidify completely and develop a creamy texture.
Before enjoying the mint ice cream, it is advisable to let it sit at room temperature for about 10 minutes. This way, the ice cream will soften slightly and be easier to serve. Room temperature will also help highlight the flavors of the ice cream.

Tips and Notes
If you want to get a more intense mint ice cream, you can follow the following tips to adjust the amount of mint syrup and milk:
Reduce the amount of milk: To compensate for the increase in mint syrup, you can reduce the amount of milk in the recipe. This will help maintain the right balance of ingredients and achieve a more concentrated mint flavor. Reduce the amount of milk proportionally to the increase in mint syrup. For example, if you’ve decided to increase the mint syrup by 30 ml, you can reduce the milk by 30 ml.
Experiment with the proportions of the ingredients until you find the perfect combination for your taste. Have fun preparing the mint ice cream!
