At this point, slowly pour in the milk, continuing to mix with regular movements to blend the ingredients well. When the mixture is smooth and uniform, incorporate the now cooled butter and stir again to distribute it evenly. Now, add the sifted flour little by little, mixing carefully to avoid forming lumps and to achieve a smooth and velvety batter. Cover the bowl with plastic wrap and let the batter rest in the refrigerator for at least 30 minutes to allow the ingredients to bind better and obtain soft and flavorful crepes.
To prepare perfect crepes, start by heating a non-stick pan over medium-low heat. Take a knob of butter and evenly grease the surface of the pan, ensuring it is well distributed to prevent the batter from sticking. Once ready, pour a ladle of batter into the center of the pan. Using the crepe spreader, spread the batter evenly, rotating it gently to create a thin and regular crepe.
After about 1 minute of cooking, observe the edges closely: they will start to lift slightly, a sign that the crepe is cooking correctly. The surface should have a light, even golden color. At this point, using a spatula, gently flip the crepe to cook the other side. Let it cook for another 60 seconds, until it achieves a golden and uniform color on both sides.
When the crepe is ready, carefully transfer it onto a plate or a cutting board. Repeat the same procedure with the rest of the batter, remembering to grease the pan with a small amount of butter each time to ensure optimal cooking. Continuing this way, you’ll obtain about 14 crepes with a diameter of 7 inches. Stack the crepes one on top of the other as you prepare them, to keep them soft and warm.
