7-Grain Bread is a healthy choice, but also the pleasure of savoring rustic bread like it used to be, crunchy outside and soft inside. The blends of various flours give a wonderful aroma, and the sesame and sunflower seeds make it even more special. With this bread, you can accompany different dishes or use it for a healthy and wholesome breakfast. There is nothing more rewarding than making bread at home. For this recipe, you will only need pre-mixed flour, like the one I chose, water, salt, yeast, and I also added a bit of malt to give more color and crispiness. You can choose the shape you prefer, like a ring, loaves, ciabatta, rolls, etc. I preferred to make a large flatbread baked in an iron tray, but any baking sheet is fine. Just give it a try!!

Ingredients
- 2.2 lbs 7-Grain Flour
- 0.7 oz extra virgin olive oil + for greasing the pan
- 2 1/3 cups room temperature water
- 2 tsp salt
- 1 packet yeast
- 0.35 oz malt

Steps
In the mixer, place the flour, oil, and yeast. Add the water gradually and start working. When it becomes more compact, add the salt and continue working for a few minutes.
Cover and let it rise for one hour.
Then take the dough again, work it for a few minutes on a work surface, helping with a little flour. Oil the base of the tray and place the dough. Let it rise for about 2 hours.
At the end of the rising, with a knife make vertical and then horizontal cuts. Bake in a preheated static oven at 392°F for 35 minutes.
The 7-Grain bread is ready. Before cutting it, let it cool on a rack.
Storage
Store the bread for up to 2 days in a paper bag. For longer periods, it is preferable to freeze it.
