Almond and Pistachio Treats

Ingredients

  • 1 1/3 cups pistachio flour
  • 1 1/4 cups blanched almonds or almond flour
  • 1 cup powdered sugar
  • 2 egg whites
  • 1 tsp honey

Steps

  • First, grind the almonds with a portion of the sugar. It will only take a few minutes to achieve a fairly fine flour. Then pour everything into a container and add the pistachio flour and the remaining sugar.

  • Mix everything together to even out the flours and add the honey, then slightly beat the egg whites and pour them in gradually.

  • Work the mixture by mixing and compacting it; the dough will be soft but not sticky. Once everything is combined, cover the container with plastic wrap and let it rest in the refrigerator for about 30 minutes.

  • After the resting time, take the mixture and form balls of about 0.7 oz each (if necessary, sprinkle a bit of powdered sugar on your hands to prevent the dough from sticking). Prepare a container with powdered sugar and roll the balls inside to cover them well.

  • Line the baking tray or a baking sheet with parchment paper, place the balls on it, and press gently with three fingers as if you wanted to give a pinch (check the photo).

  • Bake in a preheated fan oven at 350°F for 10 minutes.

  • The almond and pistachio treats are ready!

Storage

You can store the almond and pistachio treats in an airtight container for over a week.
