- 2.2 lbs approx. pork shank
- 1 glass white wine
- 1 onion

Steps
First, prepare all the spices you will need to flavor the shank and chop them. Then clean and dice the potatoes that will accompany the dish in the baking pan.
Take the shank and cover it with the spices by rubbing it directly on, as if breading a cutlet…
In the pan, put the oil and chopped onion.
Turn on medium heat and add the remaining chopped herbs. When it starts to fry, add the shank and brown well on all sides, slightly increasing the heat.
When the shank has taken color, deglaze with white wine, keeping the heat higher. Let it cook for 10 minutes.
Now proceed with the preparation in the baking pan. Put some oil and salt at the bottom, add the potatoes coating them with the oil, then spread the potatoes in the center of the pan and place the shank in the middle, pouring all the leftover sauce from the pan.
I covered with aluminum foil for the first 30 minutes, then removed it and let it cook for about 1 hour longer.
After about 1 and a half hours, the baked pork shank is ready!!
Advice
Cooking times may vary depending on the size of the shank, but you can check the cooking by inserting a skewer. If pink liquid comes out, it is still early; if it is white or none comes out, you can remove it from the oven. But consider not less than 1 hour for this specific weight.
