It is said that the creation of this cake came from a chef’s mistake, who, while preparing the almond cake, forgot to add the flour, but the result was amazing. For the preparation of the Caprese cake, you will need: chopped almonds, eggs, butter, sugar, and dark chocolate. Ingredients
- 1 1/3 cups chopped almonds
- 3/4 cup sugar
- 3 eggs
- 1 tsp vanilla extract
- 7 tbsps butter
- 3 1/2 oz dark chocolate

Preparation of the almonds
Boil some water in a pot, then turn it off and place the almonds inside. Leave them to soak for a few minutes.
Drain them, peel them, and let them dry on a towel.
Pour the almonds into the chopper little by little.
Melt the chocolate in a bain-marie or microwave.
Add the butter and mix well until it is completely melted.
Pour the almond mixture into the chocolate.
Add the vanilla essence to the chocolate and almonds. Mix and set aside.
Separate the egg yolks from the whites. Put the yolks and sugar in a container.
Beat until you get a fluffy and light cream.
At this point, you can add the almond mixture into the cream.
Beat the egg whites until stiff peaks form.
Add them little by little, mixing from bottom to top.
Butter and flour the pan.
Pour the mixture, smoothing it with a spatula.
Bake at 340°F for 30-35 minutes.
Decorate as desired and sprinkle with powdered sugar.
The Caprese cake is ready!
Advice
If you like, you can also serve the Caprese cake cold; just store it in the refrigerator. Otherwise, keep it covered at room temperature for 2 days.
